I learned a very important lesson from my mother when I was a child. Whenever we were expecting guests, or going on a trip, the thing to do was to clean out a back closet or start a really big project. I’m not sure why that is, but it seems like that is how it always happened. The rest of the house could be in shambles, but…just knowing that back closet was clean and organized made everything okay. And if company came and saw us in a huge mess? Well, we were in the middle of a huge project! Of course there will be a mess. it was expected. I guess it kind of makes sense…..
today I had my normal fifty things I needed to do so, I did come canning instead. In my defense, I did sweep the floors and have the kids do their chores, but then I started in on canning. i had bought some cauliflower a few days ago and needed to use it. I know, what the heck am I doing with cauliflower….? Well, i love those jars of hot garden veggies you can buy and thought I would try and make my own. Why not? The ingredients usually say: vinegar, salt, water, and veggies……how hard could that be?
I used cauliflower, onions, celery, bell peppers and just a few carrots. (I don’t really like carrots in these combos, but I needed fillers for the jars) I couldn’t find any peperoncinis so I used Jalepenos instead. heehee…..that’s the way I like it anyway!
Since this was a first try, without any sort of recipe, I decided to only do 24 jars. I thought about just doing one jar, but….heck, if I’m going to heat up the house, I might as well just do it!
So now here I am, listening to the beautiful clink, clink, clink of jars sealing…..praying that the concoction I came up with will be edible! But…..if nothing else, it is pretty! Cause I said so!
If you are looking for Peperoncini and can’t find them try Yellow Chile peppers. They are sweet and mildly peppery, great for adding mild warmth to your dishes. Remember when picking peppers that when it comes to chile peppers, the thinner and smaller the chile, the hotter it should or could be.
